The last working windmill in Wales has recently been taken over by Michelin star pastry chef Richard Holt who has worked along side Amaury Guichon, known as the worlds best pastry artist. We were lucky enough to meet him and took ridiculous pictures of ourselves with him donning top hats and canes. I will spare you those images. He was quite the eccentric character.
The windmill built in Llanddeusant, near Bodedern in 1775 was restored during the early 1980’s.
This was our first taste of Wales and became the source of our dessert-before-dinner tradition we stuck to pretty much the rest of the trip.
