Tis the season for pinching tails and sucking heads.
My friends Rick and Marci are from Louisiana. When we got the invite to a Crawfish boil, I just knew it was going to be good! It is weird for me that I will not eat Lobster. I just can't stand to see them boiled alive. I have zero problem eating a mound (actually I ate 3 mounds) of Crawfish. Pinching tails and sucking heads. Had I known what was in the heads the first time I ever ate one I probably would have never had even discovered that the heads truly are the best part. Some feel it is a lot of work for a little meat but it is worth the effort and so much easier to crack open than crab legs. Half the fun is standing shoulder to shoulder with a big group of people chowing down. My son was more interested at the time in playing with the millions of kids than trying to eat any of these things. Luckily I got to bring a huge bag full home. I spent the next day, shoulder to shoulder with my boy removing the meat so we could make some red beans and rice with Crawfish. So good and he thought it was fun. Next time he will be all in.
Cookouts are just one of the things I love about this time of year!
